gelatin
A translucent and colorless powder derived from collagen inside animal skin and bones. It is added to water to firm it up and provide texture, and tends to jiggle if moved around.
This tag mostly refers to the jello dessert, although it can also be used in cooking. Savory gelatin is referred to as aspic.
A similar food product derived from red algae is called agar jelly. It is commonly used in the Japanese dessert anmitsu.
